Purpose: Share a course-based community-engaged model built through partnerships among WSUV, four high schools (two Title I), and local fermented food companies, to share and learn about gut microbiome, role of fermented foods, and well-being.
Objectives:
(1) present a practical activity connecting WSUV microbiology course with high schools and industry partners; (2) show the order of low-cost activities such as talks, yogurt-making video, gram stain, and a Microbe Lunch with student infographics/tastings that connect fermented foods and gut microbiome research to mental health; (3) provide tools for assessment and logistics.
Key takeaways: a ready timeline of activities, roles, budget/safety tips, equity moves for Title I schools, and strategies to engage diverse learners.
Format: Mini-workshop with demos and peer planning.
