Jamie has been a dietitian for 18 years and brings many ingredients to the table. She spends her time in a few varied spaces within the food, nutrition and wellness realm – the kitchen, the classroom, and outdoors, seeking new adventures around every corner. Growing up in the Midwest, led Jamie to want to continually explore other parts of the globe, while providing opportunities to build, meaningful relationships with food and nutrition. Jamie received her BA in Psychology from St. Louis University and a BS in Nutrition and Dietetics from University of Illinois – Chicago. After realizing she did not know anything about food, which was discouraging when meeting with patients and clients, she went back to school to learn how to cook. She received a certificate in Culinary Arts from Boston University. In August 2010, Jamie completed her master’s requirements and received a MS in Nutrition and Physical Performance from St. Louis University, allowing her more comfort when working with athletes. In August 2017, she completed her doctoral degree in Higher Education and Student Affairs Leadership from the University of Northern Colorado, completing a dissertation on students experience with food insecurity and campus food pantries. Currently she is an Assistant Professor at Fontbonne University in St. Louis, MO where she developed an on-campus food pantry named the Griffin market in Nov. 2018. Over the past 17 years, Jamie has worked with individuals with eating disorders to achieve more mindful eating patterns and gain a positive relationship with food. She has worked with parents and their children to develop healthier eating habits and attainable meal ideas that are flavorful. She has consulted individuals diagnosed with diabetes, celiac disease and trying to manage their weight. Jamie works with students, athletes, and professionals to reach goals that make them feel confident and optimistic. She brings nutrition and culinary arts together in the kitchen to allow individuals an opportunity to attain a level of culinary education that encompasses a more approachable, harmonious lifestyle.
